Chocolate Brownie Recipe

Here we are with our first recipe ready for you to try this weekend.  These delicious chocolate brownies are moist and soft with a crunchy top, and delicious.  This makes around 16–18 brownies.  It will seem strange to put mayonnaise into a sweet recipe, but I have heard of this before, and it does work. No, you can’t tell it’s there, This got a 3 thumbs up from the team, and was quick and easy to make:  

Ingredients:

  • 40g plain flour
  • 1 tsp baking powder
  • 25g cocoa powder
  • 140g plain chocolate, broken into small pieces
  • 3 medium eggs
  • 225g caster sugar
  • 1 tsp vanilla essence
  • 110g mayonnaise, I used Helmans

Method:

Lightly grease a 23cm square cake tin and line with baking paper.  Sift the flour with the baking powder and cocoa.  Put the chocolate into a heat prood bowl over a saucepan of hot water and leave until melted.  Alternatively, microwave on medium power, stiring occassionally until just melted.  In a large bowl, whisk the eggs with the sugar and vanilla until slightly thickened.  Whisk in the melted chocolate.  Fold in the flour mixture and mayonnaise.  Pour into the prepared tin and bake in the oven for about 30-35 minutes or until a skewer inserted in the centre comes out clean.  Leave to cool in the tin before cutting into squares.

Once cold store them in an air-tight container for a couple of days.
